The absence of updated gastronomic information on the dishes offered and the culinary techniques for the preparation of each one, based on the knowledge of yesteryear. The study was focused on rescuing the knowledge of the ancestral cuisine based on the inheritance of information transferred from generation to generation in the Barrio Las Herrerías of the city of Cuenca by means of a registry of gastronomic knowledge. The methodology proposed in this proposal was qualitative with an ethnographic design and documentary compilation, in addition, field work was developed through observation, also the survey of recipes of the sector was carried out through structured interviews, additionally a location of the most representative establishments of traditional gastronomy was developed based on a georeferencing, the registration of information was developed through systematized cards that were obtained in reference to the model of the National Institute of Cultural Heritage. As a result, a recipe book was developed with the techniques and knowledge of the different traditional dishes in relation to the wraps elaborated in the Barrio Las Herrerías, despite being in the same sector, a characterization is determined in terms of flavor, aroma, textures and cooking techniques, revealing a cultural potential and traditions of the sector under study, which could be focused on new promises of gastronomic tourism.
