Starch, a versatile platform in the industry food. This review regards starch (amylose and amylopectin) which constitutes an important source of energy in the human diet. There are slowly digestible or resistant starches that have been associated with beneficial effects on human and animal health. This macromolecule is so versatile that it has various applications in the food industry, either in food production or as an additive (thickener, foaming agent, hydrocolloid); It can also be used in the textile industry due to its thermoplastic properties. Therefore, this molecule is a fundamental energy source and also represents a versatile platform for obtaining various products.
