Abstract The peanut (Arachis hypogaea L.) is an oilseed native to South America which presents a high diversity in the región. It is used in agriculture, food, livestock, pharmaceutical industry. The seed contains antioxidants, fats, proteins, carbohydrates, raw fibers, vitamins and minerals. Important for human food and nutrition in developing countries. It is produced approximately 42.63 million tons per year worldwide and is the fourth most important source in the world for the production of edible vegetable oil. The main producers and exporters in the world are India, the United States and in South America Argentina, Brazil and Bolivia, which ranks 20th among 125 countries. In Bolivia between 2006 and 2019, peanut exports accumulated more than "95 million dollars". However, there is a limitation like the aflatoxinas during the production process. It is important to know its nutritional and economic potential for food security and production economies.
